Mango Cheesecake Pie
Ingredients
1 graham cracker pie crust
8 oz cream cheese, softened
1 cup whipped topping
1 cup mango puree
1/4 cup powdered sugar
1 cup diced mango
Instructions
Beat cream cheese and powdered sugar until smooth.
Mix in mango puree.
Fold in whipped topping.
Spread into pie crust.
Refrigerate for 4 hours.

Stir in pineapple and half the coconut.
Spread into crust.
Refrigerate for at least 4 hours.
Sprinkle remaining toasted coconut on top.

1 cup boiling water
1 cup cold water
1 can (20 oz) crushed pineapple, drained
1 cup fresh strawberries, sliced
1 tub (8 oz) whipped topping, thawed
1/2 cup mini marshmallows
Instructions
Dissolve the strawberry gelatin in boiling water.
Stir in cold water and refrigerate for 20–30 minutes until slightly thickened.
Fold in the drained pineapple and sliced strawberries.
Gently mix in the whipped topping until smooth.
Stir in the mini marshmallows.
Cover and chill for at least 2 hours before serving.
Garnish with extra strawberries and marshmallows if desired.

Spinach & Cheese Lasagna
Ingredients
9 lasagna noodles
2 cups fresh spinach, chopped
1 cup ricotta cheese
3 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
1 small onion, diced
2 cloves garlic, minced
3 cups marinara sauce
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
Cook lasagna noodles according to package directions. Drain.
Sauté onion and garlic until softened.
Mix ricotta, egg, spinach, Parmesan, Italian seasoning, salt, and pepper.
Spread a thin layer of marinara sauce in a 9x13-inch baking dish.
Layer noodles, ricotta mixture, marinara sauce, and mozzarella cheese.
Repeat layers until ingredients are used.
Finish with sauce, mozzarella, and Parmesan cheese.
Cover with foil and bake at 375°F (190°C) for 25 minutes.
Remove foil and bake 10–15 minutes more until golden and bubbly.
Let rest for 10 minutes before serving.
