Getting enough protein in the morning can be a difficult challenge with busy schedules. Prepping food to take on the go helps with time management to make sure you are consuming healthy options to get the day started on the right foot! These egg bites are a great option full of protein, veggies and healthy fats! With these you have the option to add veggies, meat or toast on the side. Ingredients:
6 eggs
2 cups cottage cheese
1 bell pepper chopped
6 ounces mushrooms chopped
1 cup of cheese
Seasonings (salt, pepper, garlic powder, chili powder)
Optional to add meat as well or switch out veggies to what you have!
Instructions
Preheat oven to 350F and prep a 8x8 baking dish
Chop up bell pepper and mushrooms and add to a heated pan and add seasonings (I used a non-stick pan and no oil). Cook until peppers are softened (takes around 10-15 minutes).
Blend eggs, cottage cheese and spinach until smooth. Add in most of the cheese (save a little bit for adding to the top before cooking) and the same seasonings from the mushrooms and peppers.
Combine mushrooms and peppers with the egg mixture in the prepped 8x8 pan and cook for 40-45 minutes.
Cut into 6 pieces and place in the fridge or freezer for the week!
