Night before last, I made an ayurvedic dinner.
Colorful for the eyes, sizzling for the ears, roasted root scent for the nose, warm for the hands, and six tastes for the mouth
Astringent - roasted walnuts, potatoes & beet greens
Bitter - stir fried collard greens
Pungent - stir fried onions & black pepper
Sweet - roasted butternut squash, carrots, beets & sweet potatoes
Sour - ricotta & feta cheese
Salty - salt & stir fried beet green stems
*Next time, I'll slice the carrots to no more than 1/2" rounds and roast them with the beets. They take longer to roast ;)
