You'll love this recipe because it takes less than 20 minutes, uses just one pan, and packs approximately 40 grams of protein per serving! π
Simple High-Protein Chicken Stir Fryπ
Serves 4
Ingredients:
1Β½ lbs (680g) boneless, skinless chicken breast, cut into bite-sized pieces
2 Tbsp avocado or coconut oil
4 cups broccoli florets
1 large red bell pepper, sliced
4 garlic cloves, minced
3 Tbsp coconut aminos
1 Tbsp sesame oil
Optional: Fresh grated ginger and red pepper flakes, to taste
How to Make It:
1οΈβ£ Prep the chicken: Pat the chicken dry with paper towels and season lightly with salt and pepper if desired. Dry chicken browns better and develops more flavor.
2οΈβ£ Cook the chicken: Heat the avocado or coconut oil in a large skillet or wok over medium-high heat until shimmering. Add the chicken in a single layer and cook for 4-5 minutes, stirring occasionally, until golden brown and cooked through. Remove from the pan and set aside.
3οΈβ£ Cook the veggies: In the same pan, add the broccoli and garlic and cook for about 3 minutes, stirring frequently. Add the bell pepper and continue cooking for another 2-3 minutes, until the vegetables are tender-crisp.
4οΈβ£ Finish and serve: Return the chicken to the pan. Drizzle the coconut aminos and sesame oil over everything and toss until evenly coated. Cook for another 30-60 seconds, then serve over brown rice or cauliflower rice.
π‘ Optional: Add 1 teaspoon of freshly grated ginger and a pinch of red pepper flakes for an extra kick of flavor!
