Rillettes are traditionally prepared by slowly cooking meat until exceptionally tender, then shredding and blending it into a rich, spreadable texture.

Master Chef of France and Addison Reserve Executive Chef Yann Chupin puts his own spin on the classic, replacing the traditional pork with salmon and finishing it with fresh herbs, lemon and caviar.
