Clemson Extension community health agents work in a unique partnership with Clemson University faculty and Greenville Health Systems to provide health and wellness education programs using individual and group-based approaches to better serve Greenville County. Our purpose is to meet community members wherever they are in life to positively influence the social determinants of their health. Did you join us today for Stirring Up Healthy Recipes? 🍳🥗

Today, we focused on plant-based and vegetarian recipes, preparing three delicious dishes:

🎃 Butternut Squash Lasagna Roll-Ups — made with brown rice lasagna sheets for a whole-grain option and filled with creamy butternut squash goodness.

🌱 Black Bean & Sweet Potato Quesadillas — filled with black beans, sweet potatoes, peppers, onions and corn, then topped with avocado and cilantro.

🥦 Broccoli Cheddar Soup — a cozy, comforting favorite perfect for the fall season.

Now, these recipes may not necessarily be the lightest options—and that's okay! In the world of healthful eating, we have to learn about balance and moderation.

In our Health Extension for Diabetes classes, facilitator Julianna Lyle often shares that there are two camps of people in the world: those who live to eat and those who eat to live. When living with diabetes, we don't have to choose one or the other. Instead, we can work toward finding our place somewhere in the middle.

Healthy eating doesn't mean giving up the foods we love. ❤️

We can still enjoy a comforting dish like lasagna, a hearty quesadilla, or a creamy broccoli cheddar soup. It's about thinking about how these foods fit into the whole meal and our overall eating patterns.

For example, we can pair these comforting dishes with an array of non-starchy vegetables, fiber-rich foods, or additional protein when appropriate. 🌽🥦🥗

It's not about labeling foods as "good" or "bad." It's about learning how to enjoy the foods that bring us comfort and joy while also nourishing our bodies.

Because healthy eating isn't about perfection—it's about finding a balance that works for you.

And sometimes, that balance looks like a delicious plate of butternut squash lasagna with a big serving of vegetables on the side. 😉🍝🥦
