Step into your speakeasy soul with this fizzy little number—a playful take on a classic gin fizz, reimagined with rhubarb tang, Aperol’s bitter-sweet glow, and a frothy vegan twist that brings texture and flair.

What You’ll Need:

1.25oz Rhubarb-Infused Gin (homemade = extra cool points)
75oz Aperol – juicy, bright, slightly bitter
75oz Sloe Gin – rich, fruity backbone
5oz Fresh Lemon Juice – for balance
5oz Rich Simple Syrup – to round it out
5oz Garbanzo Bean Juice *(aka aquafaba – trust the foam!)

A few dashes of The Bitter Project “Cardamom” Bitters – warming spice to finish

How to Make It:

1. Add all ingredients to a shaker without ice and dry shake hard to build that signature silky foam.

2. Add ice and shake again until well chilled.

3. Fine strain into a chilled coupe or fizz glass.

4. Optional: top with a splash of soda water for extra lift.

5. Garnish with nothing but good vibes (or a thin lemon peel if you're feeling fancy).

Why It Works:

It’s tart, it’s bitter, it’s sweet—and then comes that soft, velvety foam with cardamom spice catching the nose as you sip. Perfect for garden parties, jazz playlists, or a sneaky Sunday on the porch.

BrĂ»lĂ©eing mandarin oranges is a quick way to add a caramelized, slightly crispy sugar crust that enhances their natural sweetness — great for desserts, cocktails, or snacking.

How to Brûlée Mandarin Oranges

Ingredients:

Mandarin oranges (peeled and separated into segments or sliced into rounds)

Granulated sugar

Equipment:

Kitchen torch (preferred) or broiler

Instructions:

1. Prepare the fruit:
Lay peeled mandarin segments or slices flat on a heat-safe surface like a metal tray, oven-safe plate, or baking sheet. Pat them dry with a paper towel — moisture interferes with caramelizing.

2. Add sugar:
Sprinkle a thin, even layer of granulated sugar over the exposed fruit. About 1/2 to 1 teaspoon per segment or slice is enough.

3. Torch it:
Using a kitchen torch, move the flame in small circles a few inches above the sugar until it melts and turns golden brown. Be careful not to burn the sugar or overheat the fruit.

Alternative (no torch):
Place the sugared fruit under a broiler on high, watching closely, for 1–2 minutes until the sugar bubbles and caramelizes. Keep the door slightly open to monitor it.

4. Let it cool:
Allow the brĂ»lĂ©ed top to cool and harden for 1–2 minutes before serving.

When the flowers bloom but your taste leans bold, this cocktail bridges seasons. Mezcal in Spring brings the smoky soul of Joven Mezcal into the light—cherry, citrus, almond, and spice come together in a vibrant twist on a wh***ey sour, with a soft floral wink and fiery rim.

What You’ll Need:

1.75oz Ilegal Joven Mezcal – earthy, smoky, unmistakable
75oz Maurin Quina Sour Cherry Liqueur – tart with a whisper of bitter depth
75oz Small Hand Foods Orgeat – creamy almond smoothness

2.25oz Housemade Sweet & Sour – balance is everything

Garnish & Rim:

A Tajin-Chamoy Rim for that sweet-spicy zing

Candied mandarin orange slices

A fresh twist of orange for brightness

How to Make It:

1. Shake hard—we’re talking full goth drama. You want everything emulsified, textured, and frothy.

2. Strain into your prepared glass with that Tajin-Chamoy kiss.

3. Garnish and admire your work before diving in.

Why It Works:

This drink is smoky without being heavy, sweet without being cloying. The orgeat and cherry lift the mezcal beautifully, while the citrus and rim kick it into something totally craveable.
