🌿 Fresh salmon, kale, lentils, cherry tomatoes, and a zesty cilantro dressing come together in a nutrient-packed, protein-rich meal that’s ridiculously easy to make. No fancy chef skills needed!

πŸ”₯ Here’s what you need:
πŸ«’ 1 tbsp olive oil
🍷 2 tbsp dry sherry (or white grape juice)
🌢️ 1 tsp cumin + 1 tsp sweet paprika
🌿 ½ cup fresh cilantro
πŸ‹ 1 lemon (zested & juiced)
πŸ§„ 1 tsp minced garlic
🐟 4 (6 oz) salmon fillets
πŸ§‚ Β½ tsp sea salt + ΒΌ tsp black pepper
πŸ₯£ 8 oz cooked lentils
πŸ₯¬ 4 cups steamed, chopped kale
πŸ… 20 cherry tomatoes (halved)

How to Make It:
1️⃣ Blend olive oil, sherry, cumin, paprika, cilantro, lemon juice/zest, and garlic.
2️⃣ Season salmon with salt & pepper.
3️⃣ layer lentils, kale, salmon, cherry tomatoes, and dressing on parchment paper.
4️⃣ Fold into a sealed packet and bake at 400Β°F for 25 minutes.

Once an athlete, always an athlete. That's a motto I've lived by, even when the scale didn't agree. As a lifelong sports enthusiast, I've had my fair share of battles with weight. It wasn't always easy, but it was worth every sweat-soaked shirt and every early morning workout.
