Easy Summer Meal Prep: 3-Ingredient Pesto Chicken Salad 🌿
Looking for a quick, high-protein base for countless summer meals? Combine:
✔️ Shredded chicken (I used a slow cooker with a little chicken stock, but a rotisserie chicken makes this even faster!)
✔️ Plain Greek yogurt
✔️ Pesto
Optional: Salt, pepper, and a sprinkle of parmesan to taste.
How I ate mine this week:
1️⃣ Wrapped in a whole wheat tortilla.
2️⃣ Tossed into a massive salad bowl with whatever veggies were left in the fridge.
3️⃣ Out of a coffee mug in the car on my way to daycare pickup. 🤷♀️
