Ayurveda is the art of living according to our nature, eating freshly prepared food, made intentionally with love and health in mind.

Lemon-dill rice served with mung beans and steamed veggies, with an olive oil dressing.

There is a subtle balance in this plate, between food that nourishes, nurtures and ground our body and food that helps it break down the essential fats needed for a healthy function of our body and mind.

𝗟𝗲𝗺𝗼𝗻-𝗱𝗶𝗹𝗹 𝗿𝗶𝗰𝗲 𝗿𝗲𝗰𝗶𝗽𝗲:
1/3 cup basmati rice, rinsed and soaked
2/3 cups saffron water
1 tsp homemade ghee
1 clove garlic
1 tsp grounded Ayurvedic spices (coriander, cumin and fennel seeds)
Juice of half a lemon
Lemon zest
1/4 cup chopped fresh dill
Salt and pepper to taste

Melt the ghee on medium high heat and add the Ayurvedic spices and garlic clove, when fragrant add the rice, mix well and add the saffron water, salt and pepper to taste.
Bring to a boil, then cover and lower heat to minimum. When the rice is cooked (15-20 min) turn off the heat, add the lemon juice, cover with a kitchen towel and on top of it cover with the lid (for really fragrant and moist rice). Leave to infuse for a few minutes then mix in the lemon zest and the chopped dill incorporating with care.
