A busyyyy and successful season which I’m very happy with 😊

Taking a bit of a running deload due to a slight flare up of my peroneal tendon (too many trails and hills!) but spending more time on the bike which is absolutely lush during these sunny days πŸš΄β€β™€οΈπŸŒž

5:45am wake up for an 2.5 hour drive just to collect the U πŸ€ͺ
A nice little 3 lap course finishing πŸ₯‡ lady and 4th overall πŸ™ŒπŸΌ
Followed by a lovely brunch, a stroll around the town and a chill in the outdoor spa πŸŠβ€β™€οΈ

πŸƒ Herby wholegrain mustard quinoa with balsamic glazed hake 🐟
A quick and tasty dinner packed full of fibre, flavour and protein πŸ’ͺ🏼
You can use a different fish, chicken or tofu and mix up the veg depending on what you have in!
Ingredients
πŸ‘‰πŸΌ 100g dried quinoa (or use precooked pack)
πŸ‘‰πŸΌ Finely chopped onion, pepper, mushrooms and a large handful of spinach
πŸ‘‰πŸΌ 1 stock cube
πŸ‘‰πŸΌ 1tbsp wholegrain mustard
πŸ‘‰πŸΌ 1tbsp garlic (purΓ©e,dried or fresh)
πŸ‘‰πŸΌ 1tsp each of dried rosemary and thyme
πŸ‘‰πŸΌ1 tbsp tomato puree
πŸ‘‰πŸΌ juice of half a lemon
πŸ‘‰πŸΌ squeeze of honey
πŸ‘‰πŸΌ 2 fillets of hake (or alternative)
πŸ‘‰πŸΌ salt and pepper
πŸ‘‰πŸΌ balsamic glaze to finish

Add the dried quinoa to a pan of boiling water (around 500mls) and dissolve the cube in it. Allow to cook for around 20 minutes until almost all of the water is absorbed.
Meanwhile, pan fry the veggies with the garlic and herbs for 5-10 minutes.
Place the hake on a foiled sheet season with salt and pepper. Cook in air fryer or oven for 10-12 minutes at 180 degrees.
Add in the wholegrain mustard, lemon, honey and tomato paste to the vegetable mixture with a splash of water to combine.
Then stir in the cooked quinoa and allow everything to simmer for a few minutes.
Once your fish is cooked, serve this on top of the quinoa with an expertly drizzle of balsamic glaze πŸ‘ŒπŸΌ

Recent running success πŸƒπŸ»β€β™€οΈπŸ₯‡πŸ’« 🏁
πŸ† 1st female at the Dunham Massey 5k 18:35 and 14th overall.
A lovely local event on the β€œuphill” course, 15 seconds quicker than when I did the β€œdownhill” version in 2024 and was πŸ₯ˆ lady
A great turnout for WRC and lots of age category wins πŸ’™πŸ’›

πŸ₯ˆ Lady at the Happy Valley trail half marathon β˜€οΈ
A brutal but beautiful course around the hills of Bollington, Kerridge and Pott Shrigley πŸ”οΈ
2 days after my pb at Christleton 5k 🫠 and even more impressive from my teammate who placed πŸ₯‡ and set a new course record πŸ‘

🌍 A continued streak of first female finishes across various parkrun venues πŸ’œ

Relationships with running can go up and down, but at the moment I’m liking this positive groove I’m in πŸ’ƒπŸ»πŸ•ΊπŸ»

A new personal best of 18:02!

The goal was not to pb, but to give it my all and get a l baseline to see how overall training is going πŸ“ˆ

However it was slightly bittersweet as my watch clocked 17:59 but my official chip time came in at 18:02 πŸ™ˆ

Regardless, there’s lessons to be learnt from my pacing and it just means I’ve got more determination to achieve that sub 18 🎯

A great turnout and set of results with the team and a social celebration after πŸ₯‚

On the other hand, I’d rather a full or half marathon than a short and sweet paincave πŸ˜†

🍊 Choc orange chia pudding 🍫
A tasty and indulgent feeling dessert but with all the health benefits!
Ingredients (serves 2)
* 20g chia seeds
* 30g pitted dates
* 100g yoghurt
* 200mls milk
* Juice and zest of an orange
* 1 square dark chocolate(I used 85%)
* 1 scoop chocolate protein powder (could use 30g cocoa powder instead)
πŸ”ΈSoak the dates in around 100mls boiling water and allow to soften. I put them in my nutribullet ready to blend.
πŸ”ΈAdd in the chia seeds, yog, milk, orange juice and protein or cocoa powder and blitz until smooth.
Allow to set in the fridge for a couple of hours.
πŸ”ΈWhen ready to serve, grate over the orange zest and dark chocolate or leave some chunks for a crunch!
βœ”οΈ Omega 3 fatty acids -chia seeds contain alpha-linolenic acid (ALA) to help reduce inflammation and improve heart health
βœ”οΈ Fibre - to support digestion and promote gut health
βœ”οΈ Protein - chia seeds are rich source of plant protein and the protein powder will also boost the content to help maintain mass and satiety
βœ”οΈ Source of Vitamin C from the oranges to aid immunity
βœ”οΈ Adaptogenic mushrooms in boost cognitive function and improve energy
βœ”οΈ Polyphenols from the dark chocolate which act as antioxidants reducing inflammation along with lots of other benefits!

11 years of running which all started at Golden Beach thanks to a little persuading from πŸ‡¦πŸ‡Ί 🌊

Apart from a hiatus for Covid, my sisters wedding day (πŸ™„) and a small handful of other Saturdays, I have been religiously going to a weekly parkrun, whether that be to run, walk, run/walk rehab or volunteer πŸ’œ

I love everything it stands for; the sense of community, the inclusivity, the chance to visit a new place, meet new people or push myself for a time πŸƒπŸ»β€β™€οΈ

It isn’t just about the running; it’s routine, it’s friendships, it’s a sense of achievement, it boosts wellbeing and it has silly little challenges that have made me travel half way across the world πŸ—ΊοΈ no joke!

If you haven’t tried a parkrun yet, I urge you to and I promise you won’t look back 😊

Thanks to all you showed up at Wilmslow today and to those that have been part of my running journey 🫢🏻 But if it wasn’t for parkrun, I wouldn’t be a runner at all!
