πŸ‘©β€πŸ³ PROTEIN PANCAKES πŸ₯ž

Serves 4

1 cup (225g) cottage cheese
1 cup (80g) rolled oats
5 eggs
2 tsp. cinnamon
1 tbsp. maple syrup
2 tbsp. coconut oil

What you need to do:

1. Place all ingredients into a blender or food processor and blitz together until smooth.

2. Heat ΒΌ of the coconut oil in a large frying pan over low-medium heat, pour about 1 cup of batter per pancake, and repeat until the pan is filled.

3. Cook until you start to see bubbles form on the surface of the pancakes, about 1-2 minutes. Then, flip and cook for another minute or until golden brown on both sides.

4. Repeat this process until all the batter has been used. Top the pancakes with your favorite toppings (see serving suggestions below).

πŸ‘©β€πŸ³ HONEY & LIME GLAZED SALMON WITH PINEAPPLE RICE 🍯

Serves 4

1.3 lb. (600g) salmon, 4 fillets

Marinade:

3 tbsp. honey
3 tbsp. lime juice
3 tbsp. soy sauce
1 tbsp. olive oil
3 tbsp. ginger, grated
2 garlic cloves, crushed

Pineapple rice:

ΒΎ cup (150g) rice
ΒΎ cup (200g) sweetcom
1 ΒΌ cups (250g) pineapple, chopped
1 β…“ cup (200g) cucumber, chopped
1 lime, juiced
2 tbsp. honey
Β½ cup coriander leaves (or mint)

What you need to do:

1. Slice the skin off the salmon fillets and discard. Rinse salmon fillets and dry.

2. Mix the ingredients of the marinade and coat the pieces of salmon. Place in a casserole and marinate for about 1 hour.

3. Cook the rice in lightly salted water, then spread on a large plate to cool.

4. Drain the sweetcorn and add to the rice. Peel and cut the pineapple into small chunks and the cucumber into small cubes. Add to the salad bowl and season with a pinch of salt, lime juice and honey. Add coriander leaves (or mint) and mix well.

5. Preheat the oven to 410Β°F (210Β°C). Bake the marinated salmon for 18 minutes, until cooked throughout.

6. Serve salmon with the prepared pineapple rice.

πŸ‘©β€πŸ³ VEGAN LEMON & COCONUT CAKE πŸ‹

Serves 12

Wet ingredients:

1 cup (240ml) almond milk, at room temp.
β…“ cup (80g) coconut oil
β…” (125g) coconut sugar
2 tbsp. lemon juice

Dry ingredients:

zest of 4 lemons
1 cup (80g) desiccated coconut
1 ΒΎ cups (210g) all-purpose white flour, sifted
1 tsp. baking powder
ΒΎ tsp. baking soda

What you need to do:

1. Heat the oven to 355Β°F (180Β°C).

2. Line a 1 kg./2 lbs. tin with baking paper.

3. Whisk softened coconut oil and sugar together with an electric whisk. Add in the lemon zest, lemon juice and room temperature plant milk and mix well with a spatula. Next, add in the desiccated coconut.

4. In a small bowl, mix the flour with the baking powder and baking soda. Next, fold in the flour into the wet ingredients and mix well, then transfer the batter to the prepared baking tin.

5. Bake for about 45 minutes, until a toothpick comes out clean and the top is nicely browned. Allow to cool completely before serving.

6. Once cool you can sprinkle the cake with some icing sugar (optional).

You can lose weight extremely quickly if you don’t eat for 4 days a week, exercise 10 hours a day (this is, of course, tongue in cheek and isn’t recommended) πŸ™ƒ

But just because you can lose weight in this way, it doesn’t mean you should 😲
