Simple, nutritious meal ideas.. 🍴🌱🍜🥕🥦

Protein, clean carbs and plently of veg added in👌

1) King Prawn and Chorizo risotto (simple onion, garlic, red pepper and chorizo oil (cook then remove) base - throw in rice and I use the remainder of a roasted vegetable sauce I had made up and froze as portions - contains vinetomatoes, carrots, red peppers, garlic all roasted in airfryer and blended- very handy to make up and keep in batches to put in a sauces or add stock and tinned tomatoes and blend up as a soup)
Add 1L chicken stock - add gradually and allow to simmer down and absorb before adding the rest
Add and cook the frozen king prawns then finish by adding the pre cooked chorizo, spinach and parmesan

2) Thai Chicken and green veg curry - Onion and garlic base, add and cook the chicken , add turmeric, chilli flakes, curry powder and yellow thai paste (can use any)
Add any green veg - I went for courgette and broccoli
Add coconut milk - allow to simmer and reduce
Serve with rice or noodles👌

3)Homemade roasted pepper , tomato and carrot soup - add chunks to airfryer with garlic and spray of oil, when cooked blend up with tinned tomatoes and stock- to bulk out I served it with spinach and ricotta tortellini

4) Omelette - tomato, spinach & cheese - quick lunch/brunch go to

5) Simple salmon stir fry

All meals ready in 20 MAX… doesn’t take much to eat well, meal plan ahead and have the ingredients in 💪🏻
