Hi Everyone,
This is Emma, a dietitian at NuActive Health Gymea who runs amazing one on one cooking classes (as well as group classes).
We work primarily with people living with chronic conditions, and individuals with disabilities but also anyone who would benefit from learning how to cook healthy meals while taking into consideration their skills, time, budget and health goals.
Each class is tailored to the individual ability, needs and goals and the client gets to take home all the food cooked and leftover ingredients.
We help with:

✔ Shopping and food storage tips
✔ Chopping and preparing food safely
✔ Improving food variety and nutrition
✔ Modifications for Arthritis, neurological conditions and reduced mobility

FRUITY YOGHURT BARK 🫐🍓 INGREDIENTS
1-2 cups vanilla yogurt (Greek or regular)
1/2 cup strawberries, chopped
1/2 cup kiwi, diced
2 tablespoons blueberries
1 tablespoon honey or maple syrup (optional, for extra sweetness)
DIRECTIONS
Line a baking tray or shallow dish with parchment paper.
Spread the yogurt evenly over the parchment paper to about 0.5cm - 1 cm (depending how long you are freezing for).
Sprinkle the chopped strawberries, kiwi, and blueberries evenly over the yogurt layer. Gently press the fruit and veggies into the yogurt.
Place the tray in the freezer for at least 3–4 hours or until fully frozen.
Once frozen, break the yogurt bark into pieces and serve immediately or store in an airtight container in the freezer.

BEEF & VEGGIE STIR-FRY
Quick, colourful and packed with flavour, this stir-fry is your new weeknight go to! Stirfries are great way to use up any vegetables leftover in the fridge 🥦 🍄🟫 🫑
🕐 30 minutes
Ingredients:
200g lean beef strips
4 broccolini stems, chopped
¼ red capsicum, thinly sliced
1 bok choy head, chopped
1 large mushroom, sliced
¼ onion, thinly sliced
1 garlic clove, minced
½ tsp ground ginger
2 tsp sesame oil
1 tbsp sweet chilli sauce
2 tbsp oyster sauce
3 tbsp soy sauce
½ cup uncooked rice (yields ~1½ cups cooked)
Method:
1. Cook the rice: Rinse rice and add to saucepan with 1 cup water. Bring to a boil, then cover and simmer for 12–15 minutes. Let sit covered for 5 minutes.
2. Cook the beef: Heat 1 tsp sesame oil in a pan. Sear beef strips for 2–3 minutes until browned. Set aside.
3. Sauté vegetables: In the same pan, heat 1 tsp sesame oil. Add onion, garlic, and ginger for 1 minute. Add broccolini and capsicum, cook 2–3 minutes. Add bok choy and stir until wilted.
4. Combine: Return beef to the pan. Add sweet chilli sauce, oyster sauce, and soy sauce. Stir-fry for 1–2 minutes until heated through and well coated.
5. Serve: Spoon rice into bowls and top with the beef and veggie mix.
