Air Fry Healthy Corn Fritters

These crispy corn fritters are a delicious snack or side dish that can be made with just a few simple ingredients. This recipe is very simple and easy to make.

Ingredients

* 1 cup frozen sweet corn, thawed and drained
* ¼ cup sliced green onions
* 1 large egg
* 4 tablespoons wholemeal flour (or Vetta Smart protein plain flour swipe to view)
* 1 teaspoon chilli powder (optional)
* Pinch of salt and pepper
* 1/2 teaspoon lemon juice

Method

1. Mix all ingredients in a bowl until combined.
2. If the mixture seems too wet, add an extra tablespoon of flour.
3. Preheat your air fryer to 180°C for 2–3 minutes.
4. Line the basket with baking paper or
5. Spoon the mixture into small fritters and flatten slightly.
6. Air fry at 180°C for 10–12 minutes, carefully flipping halfway through.
7. Cook until golden and firm.

Serve with Greek yoghurt, avocado, a side salad, or alongside eggs for a filling lunch.

For Bella Fit-style meal prep, these keep well in the fridge for 3–4 days and are great in lunchboxes. 💪🌽

It’s been an absolute pleasure having Laura Dean as part of the Bella Fit community, along with her kids who join us for some sessions too.

One of the most rewarding parts of what I do is watching women grow in confidence, strength and fitness, and Laura is a wonderful example of that. She has come such a long way, always willing to give things a go, challenge herself and keep showing up.

Lunchbox Snack: Puffed Protein Crisp Bars 🍫
An alternative to traditional LCM bars, this version is with protein puff crisps for a little extra staying power rather than using rice bubbles.

While it’s a healthier option, it still contains marshmallows and butter, so it’s best enjoyed as an occasional snack rather than an everyday staple. By swapping some of the rice bubbles for protein crisps, you’re adding a little more protein to help keep tummies fuller for longer and provide better fuel for busy days.

A simple homemade lunchbox treat that balances fun with a nutritional boost! 🙌🏻

Ingredients:
60g butter
100g white marshmallows
5-6 cups protein puffs or quinoa puffs
1/4 cup cacao nibs or dark chocolate chips

Method:

* Step 1
Grease and line the base and sides of a
20 x 30cm lamington pan, allowing the
2 long sides to overhang.

* Step 2
Combine the butter and marshmallows in a medium saucepan over medium-low heat. Cook, stirring, for 5 minutes or until butter and marshmallows melt and mixture is smooth.
* Step 3
Combine the protein puffs and cacao nibs/dark chocolate chips in a large bowl. Pour over the marshmallow mixture and quickly stir to combine. Spoon mixture into the prepared pan, use the back of a spoon to smooth the surface. Place in the fridge for 2 hours to set. Cut into 3 x 10cm bars to serve.

One thing I’ve really started to notice on my walks is how many people are walking while looking at their phones.

It seems so strange to me when we’re surrounded by stunning beaches, beautiful nature, and all the little moments happening around us. Not to mention the possibility of bumping into someone… or something! 😅

Maybe it’s more on my radar because of my age, or because I’m beginning to navigate boundaries around technology with my almost-teenager. It’s also made me reflect on my own habits and ensure I’m practising what I’m trying to teach my children.

The days, weeks, and months seem to be flying by faster than ever. I’d hate for any of us to miss the simple pleasures—the fresh air, a beautiful sunrise, a friendly smile, or just the opportunity to be present and enjoy life.

I share this as a gentle reminder for all of us, myself included, to be aware and make the most of each day. Life really does go by so quickly, and the small moments often become the ones we treasure most. 🩷

At Bella Fit, we believe fitness doesn’t have to leave you feeling exhausted to be effective. 💪🏻

Today’s workout included kettlebell swings, KB Squat + Jump battle ropes, snatches and the rower — a great combination to elevate the heart rate, improve cardiovascular fitness and build strength.

Every workout is an opportunity to invest in your health, boost your energy and release those feel-good endorphins. 🙌🏻

On these chilly winter days, movement is one of the best ways to warm the body, lift the mood and remind yourself just how capable you are.

Show up, do what you can, and remember that every step forward counts. ❤️❄️🔥

After training the Bella Fit ladies this morning, I enjoyed a great day out with my girl at Taronga Zoo 🦁🐘🦒

It had been a while since my last visit, and it was so much fun playing tourist in our own city. We spent the day exploring, spotting amazing animals, and taking in the beautiful views of Sydney Harbour.

We definitely got our steps in too — over 15,000 for the day! 🚶‍♀️💪🏻

A wonderful way to stay active while making special memories together ❤️
