Our ICE Stage 2 students have begun developing their skills in preparing and producing meat dishes, getting hands-on with a variety of cuts, techniques and flavours.
This week, pork is on the menu π· - with students learning how different cuts can be prepared, cooked and transformed into quality dishes worthy of a commercial kitchen.
And then thereβs the dish that always divides the crowdβ¦ blood sausage! π²
Love it or leave it? Thereβs no sitting on the fence with this one!
At ICE, itβs all about giving students the confidence to get hands-on, try new things and develop the real-world skills demanded by industry. Every new technique adds another skill to their culinary toolkit. πͺπ¨βπ³

For those who donβt know, Mu'ooz is a beautiful Eritrean restaurant in the heart of West End. But they are so much more than just amazing food - they are a social enterprise dedicated to supporting, training, and empowering refugee women from across Africa. Over the years, they have helped more than 400 women build new lives and careers.

Congratulations to ICE apprentice James Beaven who qualified as a chef last week at βTodd and Pupβ in Moorooka. Thank you to Olga for helping him through his apprenticeship for the final phase. We are super proud of you James and I know your mum Linda (ex ICE student) will be so proud of you too!
