One day, one ticket, three Lake District stops! Wow! 🤩 🚌🍃

Windermere → Ambleside → Coniston, all on a North West Explorer ticket, open-top views, quiet country lanes, and a boat trip on the lake to finish it off.

This is exactly why I love exploring by bus, just hop on, hop off, and let the journey be part of the day.

Chicken, avocado, jam, and cheese toastie made with ‘s new croissant loaf. It was the yummiest ever!

The Recipe
Ingredients -
For the Sandwich:
* St Pierre Croissant Loaf
* 4 large eggs
* A handful of fresh coriander, finely chopped
* 1 tsp ground cinnamon
* 1 ripe avocado, sliced
* 3 chicken breasts or equivalent chicken portions, seasoned
* Slices of American cheese
* St Dalfour Jams
* Butter for the grill

For the Iced Coffee:
* 2 tbsp instant coffee granules
* 2 tbsp granulated sugar
* 2 tbsp boiling water
* Warm water
* Ice cubes
* * 250ml milk of choice

Side:
* 1 fresh mango, diced

Method
1. Prepare the Chicken: Boil the seasoned chicken portions until cooked through. Transfer them to the airfryer until the exterior is crisp, and then shred the meat.
2. Prepare the Egg Wash: In a bowl, whisk the finely chopped fresh coriander with the eggs and a pinch of ground cinnamon for a savoury French toast base.
3. Prep the Fillings: Slice the fresh avocado and set aside.
4. Grill the Slices: Butter your sandwich press or grill. Dip the slices of the Croissant Loaf into the egg mixture to coat both sides. Place them on the grill to toast for a few minutes.
6. 6. Assemble the Sandwich: On the toasted slices, spread a layer of jam. Layer on the thinly sliced avocado and the shredded chicken, then top with American cheese slices before closing the sandwich.
7. The Final Melt: Place the assembled sandwich back onto the hot grill to toast lightly until the cheese melts.
8. Whip the Coffee: Mix your milk of choice with some warm water in a stand mixer. In a blender, combine the instant coffee, sugar, and boiling water. Blend on high speed until it froths into a thick foam.
9. Serve: Fill two glasses with ice cubes and pour the milk mixture over the ice. Spoon the whipped coffee foam right on top. Slice your hot sandwich and serve it alongside the fresh diced mango.

Apfelschorle, sourdough bread, and some solid active recovery from getting my steps in while wandering around Mathildenhöhe in the late afternoon light. The Hochzeitsturm is brilliant, and the leafless trees in the Platanenhain are beautiful to see in person. I had such a time in Darmstadt, Germany. 🇩🇪
