Gluten, a protein complex made up of two types of proteins - gliadin and glutenin is found in a family of Triticeae develops its form whenever we knead the flour, with the help of crossing of the gliadin and glutenin proteins. This gives a viscoelastic nature to the dough and shapes to cakes, pastries, patties, etc. But gliadin can cause autoimmunity in which neurons of a gluten - sensitive person can be gradually destroyed.
