Most North Carolina homeowners either ignore carpenter bees or reach for a spray can. What their presence is actually signaling about your porch and the wood around it is worth understanding before you do either.

CRISPY HOT HONEY FETA CHICKEN | Serves 4

INGREDIENTS

1/3 cup / 110g Honey
1 1/2 tsp Hot Sauce (I like Frank’s or Cholula)
3/4 tsp Chilli Flakes
2x 250g/9oz Chicken Breasts
2 tsp Paprika
1 tsp Salt
1/2 tsp EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
1/4 tsp Cayenne Pepper
35g/1/4 cup Plain Flour
2 Eggs, beaten
65g/1 cup Panko Breadcrumbs
Veg Oil, as needed (6-8 tbsp)
200g/7oz Feta, crumbled

METHOD

1️⃣Combine honey, hot sauce & chilli flakes in a bowl & warm in the microwave (20 secs or so). Stir then leave to cool. You can also do this on the stove in a small pot (just bring to a simmer then remove and cool). Adjust heat with chilli flakes/hot sauce if desired.
2️⃣Horizontally slice the chicken breasts right through the centre to create 4 even-sized breasts. In a small pot/bowl combine paprika, salt, onion powder, garlic powder, oregano, cayenne & black pepper.
3️⃣Line up 3 large shallow dishes & place a large tray at the end. 1st = flour + 1/2 seasoning, 2nd = beaten egg, 3rd = Panko + rest of the seasoning. One by one dredge the chicken through flour, egg then Panko then place on tray. Thoroughly coat at each stage (namely the breadcrumbs).
4️⃣Add enough oil to coat the base of a large pan & place it over medium-high heat. Once the oil is hot enough that a breadcrumb rapidly sizzles, place in the chicken (if you can’t fit 4 pieces then work in 2 batches, top up the oil in between if needed). Fry for 3-4mins each side or until deep golden on the outside & white/piping hot through the centre. Place on a wire rack above the tray.
5️⃣Cover chicken in feta & place under the grill/broiler on high until it starts turning golden. Serve with your preferred amount of honey & enjoy (store leftover honey).

This sweet treat won’t spike your blood sugar since it has a good combo of protein and fat!

RECIPE:
7 chocolate rice cakes
1 cup PB Fit powder
2 scoops chocolate protein powder (I used @flavcity Brownie Batter)
1 to 1 1/2 cups Fairlife milk
1/3 cup dark chocolate chips (I used @hukitchen)
1 tsp coconut oil

1. Mix peanut butter powder and chocolate protein powder with milk until creamy.
2. Spread on rice cakes.
3. Heat chocolate and coconut oil in the microwave and drizzle on top of rice cakes.
4. Freeze til chocolate hardens. Store in freezer.

Makes 7 servings.

MACROS:227 cal/17g protein/8g fat/24g carb/3g fiber
