So as many of you know I've spent the last several weeks in the kitchen preparing for the Swla's Hot Sauce Fest. I realize I never posted what all I did in there, so here we go!

In order of the pictures (which are also captioned):

Three New Hot Sauces:
Pineapple Express: Honey and Pineapples with Serrano, Thai and Cayenne peppers.
The Big Lebowski: Hatch Chili sauce with lime, garlic and cilantro.
Green Mile Directors Cut: (Technically a new version, not a new sauce.) The fan favorite Green Mile with added heat and cilantro.

Hot Sauce Returning Favorites:
Green Mile, Soylent Green, Rocky Horror Picture Show, Tropic Thunder, Clockwork Orange, Big Trouble in Little China, Natural Born Killers, Tequila Sunrise.

The 4 Hot Sauces We Had in Stock Already:
White Chicks, The Godfather, The Crow and Red Dragon.

The Three BBQ Sauces:
Black Gold, Whiskey Tango Foxtrot and Sweet Caroline.
(Low Inventory for all three.)

Dipping Sauces:
Smoked Sriracha Hot Honey, Mother Clucking Chicken Sauce, White Trash Sauce, Enter the Dragon, Sriracha Sweet & Sour, Sweet Korean Chili Sauce.

Dry Seasonings and Rubs:
Kinda a Big Dill, Sweet Heat, Big Trouble in Little China, Smoked Jalapeno Sea Salt, Smoked Black Garlic Sea Salt, Dazed and Confused.

All in all, over the last 2 weeks we've processed 2500+ bottles. All by hand, in my lil home kitchen. Come getcha some!

SWLA Hot Sauce Fest Is About To Turn Up The Heat Think your hot sauce can handle the competition? The SWLA Hot Sauce Fest is coming to Sulphur with food, contests, vendors, and plenty of heat. Who's brave enough to try the pepper challenge?

Hatch Green Chili season has begun at HEB... Ever year I think about creating a hatch chili hot sauce and then the season is over before I get around to it...

This year I'ma do it! What kinda flavor profile do y'all wanna see with it?

Two full days in the kitchen processing 120 pounds of garlic and ~200 pounds of assorted peppers into the fermentation buckets to get ready for Swla's Hot Sauce Fest in August. 90+ gallons across 7 flavors so far with more to come!

Can't wait for this event, it's gonna be a blast!

Two announcements to make, first I'll be attending the Swla's Hot Sauce Fest in August just over the border in Sulphur. It's the first (of hopefully many to come) and if you like things spicy, you should definitely make the trip to hang out and check out all the awesome vendors. (And help me win that People's Choice award!)

Which leads me to #2... It's time to get some stuff loaded into the fermentation buckets... What hot sauces that are currently out of stock do you want back? Finally! Whiskey Tango Foxtrot will be back in stock this weekend at Central Mall Port Arthur at the DNCE Crafty Spring Market! Y'all wiped my already low stock out after I won the Community Votes award for Best BBQ and I haven't had a chance to make more, until now!
