🍚 LET’S TALK ABOUT RICE.
I had a good conversation with a client this morning about RICE, so let’s talk about it here.
If your fitness goal is fat loss, muscle gain, better performance—or simply eating healthier—you do NOT have to be afraid of rice.
Rice is a simple, easy-to-digest carbohydrate that can help fuel training, replenish the glycogen you use during workouts, and pair perfectly with a solid protein source.
But here’s a cool little nutrition trick you may not know…
COOK YOUR RICE. COOL IT. THEN EAT IT LATER.
When cooked rice cools in the refrigerator, some of its digestible starch changes through a process called retrogradation.
That creates more resistant starch.
Resistant starch isn’t digested in the small intestine quite the same way regular starch is. Instead, some of it makes its way to the large intestine, where it can act more like fermentable fiber.
Why is that interesting?
Potentially a smaller blood-sugar response
Cooling rice can reduce how quickly some of its carbohydrate is digested. Studies have found that cooked, cooled—and even reheated—rice can produce a lower post-meal glucose response than freshly cooked rice in some circumstances.
Your gut microbes may like it
Resistant starch can be fermented by bacteria in your colon, producing short-chain fatty acids such as butyrate. These compounds play important roles in colon and metabolic health.
It may help with fullness
Because resistant starch behaves differently from rapidly digested starch, including resistant-starch foods may help support satiety. But don’t turn this into “refrigerated rice magically makes you lose weight.” It doesn’t.
AND YES, IT’S STILL A CARB.
Cooling rice does not suddenly make a cup of rice calorie-free or turn it into a low-carb food.
If you’re working toward fat loss, portions and your overall calorie intake still matter.
If you’re training hard, carbs are also fuel. There’s no prize for eliminating them simply because you’re trying to get leaner.

Build the bowl:
🍚 Rice for carbs
🥩 Chicken, beef, turkey, fish or another quality protein
🥦 Plenty of vegetables
🥑 A reasonable source of healthy fat
Cook your rice ahead of time, get it into the refrigerator promptly, let it cool overnight, and use it for tomorrow’s meals.
BONUS: You can reheat it. Some of the resistant starch created during cooling remains after reheating.
⚠️ ONE IMPORTANT RICE RULE:
Cooked rice can grow Bacillus cereus if it sits at room temperature too long. Refrigerate leftovers promptly, keep them cold, and reheat them thoroughly.
Stop making carbohydrates the villain.
Use them strategically. Fuel your training. Hit your protein. Eat your vegetables. Control your portions. And MAKE TODAY COUNT. 💪🏼
