🌶️ Nigerian Suya with Homemade Yaji
For the Yaji(yaji is the Suya peppery spice)

½ cup roasted groundnuts, finely ground
2 tbsp cayenne pepper or ground dried pepper
1 tsp ginger powder
1 tsp garlic powder
1 tsp paprika
½ tsp onion powder
1 seasoning cube, crushed
Salt to taste

For the Suya:
1 kg beef, thinly sliced
2–3 tbsp yaji
2 tbsp vegetable oil
Extra yaji for coating

Steps by step preparation

Make the yaji: Mix all the yaji ingredients thoroughly and set aside.

Season the beef: Coat the sliced beef with yaji and a little oil. Marinate for 30–60 minutes.

Skewer: Thread the beef onto wooden skewers (Suya sticks)

Grill: Grill over charcoal or in an oven, turning regularly and brushing lightly with oil until cooked, browned and slightly charred.

Finish: Sprinkle generously with more yaji.

Serve: Slice and serve hot with onions,
tomatoes and cabbage. 🌶️🥩

Tip: Soak wooden skewers(Suya stick) in water for about 20–30 minutes before using them in the oven.
