Since 2019, his London restaurant Paradise in Soho has earned a Michelin Bib Gourmand, pairing single-origin Sri Lankan spices with seasonal British produce. Now, with his ten-seat chefs table Open Door Policy (ODP) in Colombo, he’s bringing that vision home — highlighting his British/Sri-Lankan heritage whilst supporting local farmers and producers along the way.
