🌱 HIGH-PROTEIN VEGAN MEAL PREP 💪
Simple, nutritious and packed with plant-based protein — exactly what meal prep should be about.
This Edamame Spaghetti, Seitan & Kimchi Bowl is a brilliant option for busy days when you want something quick, filling and seriously high in protein.
Per portion:
• 100g edamame spaghetti
• ½ pack seitan
• 1 tbsp kimchi
💪 Macros per portion:
🔥 ~450 kcal
🌱 62g protein
⚡ 21g carbs
🥑 14g fat
That’s a whopping 62g of plant-based protein in one meal — making it a great option for supporting muscle growth, recovery and keeping you feeling satisfied.
And the kimchi brings a little fermented-food goodness to the party too. 🌶️🥬

Today’s Breakfast 🥞 🤤
High-Protein Vegan Almond Flour Pancakes
Makes: 6–8 medium pancakes (2 servings)
Ingredients
* 60g almond flour
* 40g vanilla vegan protein powder (pea/soy blend works best)
* 40g oat flour (or blended rolled oats)
* 1 tsp baking powder
* ½ tsp ground cinnamon (optional)
* Pinch of salt
* 1 tbsp ground flaxseed
* 3 tbsp water (to make a flax egg)
* 180–220ml unsweetened soy milk
* 1 tsp vanilla extract
* 1 tsp maple syrup (optional)
* 1 tsp apple cider vinegar (helps create fluffier pancakes)
Instructions
1. Mix the flaxseed with the 3 tbsp water and leave for 5 minutes until gel-like.
2. In a bowl, combine the almond flour, protein powder, oat flour, baking powder, cinnamon, and salt.
3. Stir in the flax egg, soy milk, vanilla, maple syrup (if using), and apple cider vinegar.
4. Let the batter rest for 5 minutes. If it’s too thick, add a splash more soy milk.
5. Heat a lightly oiled non-stick pan over medium-low heat.
6. Cook each pancake for around 2–3 minutes until bubbles appear, then flip and cook for another 2 minutes.
7. Serve immediately.
Approximate nutrition (per serving, half the recipe)
* Calories: ~370 kcal
* Protein: ~31g
* Carbohydrates: ~22g
* Fat: ~18g
* Fibre: ~8g
For even more protein (40g+ per serving)
Mix together:
* 200g unsweetened high-protein soy yogurt
* 20g vanilla vegan protein powder
