Meals for the week for our 30 day Lean Challenge
Breakfasts
✅Monday: Protein overnight oats
✅Tuesday: eggs + toast + 1/2 cup of fruits with ¼ cup Greek yogurt and ¼ cup cottage cheese
✅Wednesday: Protein overnight oats
✅Thursday: Smoothie and toast for me/ eggs and toast for Jagafa
✅Friday: Yogurt parfait + toast
✅Saturday: crepes, eggs and fruits
✅Sunday: Protein oatmeal and fruits

Lunch:
Roasted potatoes, steamed peas and Italian chicken

Suppers
✅Monday: Quinoa and lentil stirfry
✅Tuesday: Taco bowl
✅Wednesday: waffles, eggs and fruits
✅Thursday: Meatball soup with bun
✅Friday: Pizza and Salad
✅Saturday: Ground beef and salad
✅Sunday: A fun meal

Each week we will switch meals out and I’ll share if we’re doing very different meals. It’s only 30 days and nothing here is something we don’t already enjoy so I don’t anticipate this being impossible. There will also be treat days planned because treats are important to us.

Reminders for the week

Intention is great but intention without action is just you overthinking but never doing anything about it.

Be intentional and take actions that match your intention.

Choose consistency over intensity. Intensity is required for certain goals but when you’re just starting, maintaining consistency is better than chasing intensity.

You don’t build muscle by skipping breakfast and lifting the same 5lbs from 10 years ago, do better 😜.

Change takes time and you can’t unlearn everything you’ve done most of your life in 6 weeks, chill out.

Start small, set your big goals but remember to work small, one small step at a time in the right direction is better than sprinting without purpose the first one leads to consistency and the latter leads to burnout and resentment.

Today is a good day to start, if you need to ask for help to start then do that, you’ve been trying to figure it out yourself maybe it’s time to ask for help.

Leaving you with some reflections/thoughts

1. There’s no healing without honesty: when you’re not honest to yourself and others you reinforce the brokenness you’re trying to break free from. Prompt: think about how this might apply to different areas of your life. Where in your life are you not being honest with efforts, surrender or being accountable?



Hard isn’t the same thing as bad: we are currently on a vacation (aka parenting in a different place) and it’s been hard because kids thrive on routine, even if we’re having fun it’s also been hard a lot of the times but hard isn’t the same as bad (this phrase is from a book I read with the same title by Abbie Harlberstadt). Of course vacation with kids is hard but it’s also fun, we’re making memories. The sum of these memories will be things our family can always go back to.



Fully Known and Fully Loved: this phrase is inspired by a song really like by Tauryn Wells (titled: known), I just love this idea of not just being known but also being loved because often I’m afraid that if people truly knew me they won’t love me fully, and that’s fair because to love a person fully is a big ask, people don’t have the capacity to love people fully without the grace of God. I am thankful that I have a God who knows me fully and still loves me fully. I’m also thankful that by God’s grace there are so many people who know me fully ish 😜 and love me fully, and there are people (like my husband, kids, family, and close friends) that I know fully ish and I still love them. My prayer is that if you’re reading this you can experience this too.



Consistency breeds consistency: I was thinking about how consistency can become a little less hard because we’ve been consistent long enough to reap the benefits and these benefits help us to want to stay consistent. For instance if you just stayed consistent with doing 10 minute workouts daily, it would help you feel good enough daily that you begin to make time for it even when it’s hard to make time for it. Sharing how I make oven jollof rice using Jollof now from Atare Foods

In this video I didn’t use chicken or meat broth for the rice but in the past I have and it does make the jollof rice even better, so I recommend that.

There’s instructions on how to use the jollof now w sauce on the container but here’s how I use it

Jollof now oven jollof rice

Ingredients:
✅1 jar jollof now
✅3-4 cups rice (I use parboiled rice or Jasmin basmati rice, washed)
✅3-4 cups chicken or meat broth or vegetarian broth if you’re vegetarian
✅2-3 tablespoon bouillon powder seasoning
✅2-3 bay leaves
✅2 tbsp butter
✅Salt to taste

Direction
✅Preheat your oven to 400F-420F depending on your oven
✅Place everything except butter in an oven safe pan
✅Stir properly
✅Seal with foil
✅Place oven safe pan in the oven
✅Leave it in for about 40-45 minutes, then check it. The rice should be done at that time, bring it out and fluff, then add the butter, put it back for another 5-10 minutes and it’s ready.

I love this method because I can go about doing other things for the 40 minutes before checking again and the clean up is easier because my pan doesn’t get burnt. The main reason I love this method is because I believe my late grandma would have loved it too, she always talked about how fun cooking with a stove was and I think she would have loved to see all the things modern cooking gadgets can do. It’s about food and it’s also about love, life and all the things that make us feel closer to home.

Children are a heritage from the Lord, offspring a reward from him. Like arrows in the hands of a warrior are children born in one’s youth. Blessed is the man whose quiver is full of them. - Psalm 127:3-5

Prayer: God help me to love my children more, to serve them not begrudgingly but with joy, help me to stop escaping my current season and rush to the next. Children are whole people too, they hear the ways we can view them as inconvenience and it’s important to remember that this doesn’t make motherhood any easier.

Contentment doesn’t cancel out ambition. There’s a misconception that contentment means you’ve lost your ambitious spirit when you become a mom. You can be radically content in your life and in your season and still have ambition. It’s okay to let certain ambitions or desires take a back seat because of your season of life.

Being a good steward of your health doesn’t require most of what people are telling you online. Focus on the basic habits first, things like drinking enough water for your body, eating balanced meals, moving your body consistently, having a good sleep and rest routine.

You are not enough but God is enough and that is great news. Where you fail, God won’t, where you struggle, God doesn’t and in your weakness God is strong. I don’t know about you but this is the best news to me because I know I’m limited and I’m glad I don’t have to try to be limitless.

Let God use motherhood as a tool for refinement, because motherhood stretches you both literally and figuratively it can also be the best way for God to grow us if we let Him.
