PLANT-BASED CHOCOLATE CAKE (NO OIL • NATURAL SWEETNESS) 🍫🌱

Ingredients

Cake Base
• 2 cups rolled oats
• 1 cup pumpkin seeds
• 1 cup walnuts
• 1 tbsp psyllium husk
• ½ tsp pink salt

Chocolate Mango Cream
• 2 tbsp raw cacao powder
• 2 ripe mangos
• 4 tbsp organic date syrup

Instructions

1️⃣ Preheat oven
Preheat your oven to 180°C (350°F).

2️⃣ Blend the base
Add rolled oats, pumpkin seeds, and walnuts into a blender. Blend until it becomes a coarse flour.

3️⃣ Add binding ingredients
Add psyllium husk and pink salt. Add a little water if needed and blend until the mixture becomes slightly sticky.

4️⃣ Prepare the cake base
Press the mixture evenly into a baking tray or baking dish.

5️⃣ Bake
Bake for about 25 minutes until the cake base becomes firm.

6️⃣ Cool down
Remove from the oven and allow the cake to cool completely.

7️⃣ Make the chocolate cream
Blend mangos, cacao powder, and date syrup until smooth and creamy.

8️⃣ Add the topping
Pour the chocolate mango cream over the cooled cake and spread evenly.

9️⃣ Serve
Slice into squares and enjoy your healthy plant-based chocolate cake! 🍫🌱

🌽 Ingredients:
• 3 cups fresh corn (blended until smooth)
• 2 cups oat flour
• 2 ripe bananas (mashed)
• 3 tablespoons homemade peanut butter
• 2 tablespoons nutritional yeast
• 1 tablespoon psyllium husk
• A pinch of pink Himalayan or sea salt

👩🏽‍🍳 Instructions:
1. Preheat the oven to 180°C and line or lightly prepare a baking pan.
2. Blend the fresh corn until smooth and pour into a mixing bowl.
3. Add the mashed bananas and homemade peanut butter, mixing well until combined.
4. Stir in the nutritional yeast, psyllium husk, and salt.
5. Gradually fold in the oat flour and mix until a thick, even bread dough forms.
6. Transfer the dough into the prepared baking pan and spread evenly.
7. Bake for 45–50 minutes, or until firm and cooked through.
8. Remove from the oven and allow to cool slightly before slicing.
